Get your hands on these WHOACAKES!

Whoa mama (and papa, cuz these healthy pancakes are for everyone!). I LOVE pancakes, for all the nostalgic reasons and also for their practicality when made with the good good. This morning, in an all-out ravenous post-workout moment I made the above and they came out (tootin’ my own horn here) FREAKING AMAZING! These are the result of a lot of previous experimentation with recipes and ingredients I had handy. Here’s what I came up with as a result of frankensteining two recipes, and adding my own flava:

2 tbls ground flax meal
1/2 very ripe banana
1 egg
a splash of vanilla extract
sprinkle of cinnamon
sprinkle of cardamom
2 tbls unsweetened almond milk
makes about 5, thin 5″ whoacakes

Blend all of the above, either with a fork or whisk while simultaneously heating 1 tbls coconut oil in a pan. Coconut oil heats really quickly, so throw a couple drops of water in the pan after a couple minutes to test if the oil is hot enough (it’ll crackle and pop if the oil is ready to rock). Cook on one side until you see bubbles* in the uncooked side, then flip for another 45-60 seconds. BOOM! That’s it! I thought they were sweet enough with the banana in there (add a whole banana if you like more sweetness) and added some butter made by grass-fed cows.

These babies pack protein, sustainable carbs, Omega-3 fatty acids, fiber and FLAVA!!!

* If you really want to have your and your loved ones minds blown, sprinkle some unsweetened coconut flakes and a drizzle of coconut nectar (or pure maple syrup) on the uncooked side before you flip it. It’ll toast and sweeten the coconut as the second side cooks…..I’m droolin’ over here just thinking about it…
